Rebecca founded Apple Tree Cake Design in 2012. She’s based in Tiptree, Essex, where she lives with her husband and their two beautiful (but bonkers!) cocker spaniels.

Specialising in sugar flowers, Rebecca combines beautifully intricate designs with classical and contemporary finishes. The emphasis is as much on the decoration as the cake within; she ensures she uses only the finest ingredients for her clients’ cakes, resulting in countless rave reviews, many of them online. “I love creative baking and I love weddings. It really is that simple. With a Swiss Master Baker in the family, I was exposed to the wonderful world of baking at an early age and so my love affair with it began.”

“Sugar flowers are my favourite things to make. Particular favourites at the moment are the David Austin style roses, hydrangeas and peonies. Each cake I make is bespoke and I take so many things into consideration for the design process: my clients’ colour scheme, their venue, the style of their wedding. It’s so much fun to design and create each cake.”

Her creativity doesn’t stop at cakes; “When I’m not busy in the kitchen, I like to paint with watercolours, potter in the garden, and sew. I have a love of ceramics too, and I used to have a pottery studio. Long dog walks with my husband help me wind down, and we try to get away to the North Norfolk coast for a long holiday every year out of wedding season.”

Isabelle had never in her life baked a cake until 10 years when she discovered she had a flair and a talent for designing and baking tasty treats! So she decided to teach herself the techniques involved and swiftly found that there was a demand for her talents among friends and family. Not long after, The Designer Cake Company was formed. And in just a few years it has grown to become one of the premier wedding cake companies in the North East. Over to Isabelle…

“I’ve always had a creative streak and trained as a professional dancer with The Royal Ballet before spending four years studying Fashion Marketing at Northumbria University in Newcastle. I then moved to London and worked for a leading Fashion PR agency on accounts such as Calvin Klein and Hugo Boss, before moving back to the North East and world of baking!”
